I make the best Sweet Potatoe Pie, in the world!

Making a meat loaf, corn, mash potatoes and biscuits for dinner. You can have a plate..........

Jamila is now sitting in a chair in the dining room where I am. She is getting a snappy little, roll your eyes, attitude. I have to put her in check NOW. It is 2:30 p.m. I only gave her 15 minutes sitting in a chair where we can see each other and it took her 20 minutes before she settled down long enough for "time out" to be started.

Listen..............I would prefer to kick her ass and get it over with. This takes too many parentying skills for me

Been going to pain management. Have disc and bone problems. Getting PT and steriod shots. The one yesterday seemed to work. My neck doesn't hurt like it used to.

Trying to get something together for these kid for Christmas. Would be better if I had a job. Did I tell you about the good job that couldn't hire me because of my old police record from 20 years agon?

And life goes on...........

No one ever reads this anymore, so I can probably write stuff here I don't want anyone to know. Kewl, huh?

I am still not working. I think I will be more than ready soon though. They found ulcers and kidney stones and I have meds for the former, so that is some the pain I don't have to go through. I am waiting results from a stomach biopsy and blood tests.

I go to a pain doc Tuesday on the advice of my Gastro Doc. Hopefully, I can get on some kind of regime that will allow me to get back to normal. I don't tell a lot of folks, but I hurt most of the time. My joints, but mainly my neck and back. Makes it hard to get up in the morning or to do anything around the house etc. I'm working NOW, finally, on getting things back together. I had gotten resigned to the fact that my primary doc was not going to help, but since all my new found diagnosis, I think I can get back to normal with the right treatments.

I found my daughter whom I had allowed to be adopted. All these years I have not been allowed to contact her and now she thinks that I chose other things over her. I wish I could tell her the real reasons, but she is not really ready for that and it would be mean me undermining her current mother. I find that hard to do, no matter how justified.

I think I might hang out her more now :-).

my mother in law made these all the time

5 lbs. lean pork or beef, cooked and shredded
6 to 7 lbs. fresh masa
1 1/2 lbs lard
1 tbls. salt
1 1/2 pts. red chili sauce
1 bundle oujas (corn shucks)
Directions

To make tamales, cook meat by boiling in a large covered pot with enough water to cover completely. Add salt to taste and slow boil till completely done. Cool meat and save broth. When meat has cooled, shred and mix in the chili sauce. Clean oujas (corn shucks or outer husk) in warm water. (make masa by hand or with mixer) Mix the masa, lard , salt and enough broth to make a smooth paste. Beat till a small amount (1 tsp) will float in a cup of cool water.

Spread masa (1/8 to 1/4 inch thick layer, or to preference) on ouja, add a small amount of meat and roll up. Fold up ends of ouja and place(fold down) on a rack in a pan deep enough to steam. Add 1 to 2 inches water, cover with a tight fitting lid and steam about 1 1/2 hours. (a cloth can be used under the lid to make a tighter fit)

Many variations of ingredients can be used in making tamales. You can use a combination of beef and pork, use chicken or even fried beans. One or two olives may be added to the center or try adding a few raisins.
This recipe will make 4 to 5 dozen tamales

"Paula Deen's Lemon Meringue Pie

One 14 oz.Can Sweetened condensed milk
1/2 C.Lemon Juice (fresh)
1 tsp.grated lemon zest
3 Egg Yolks
One 8inch PREBAKED pie shell ( I like the Pillbury kind that unroll; they're in the refrigerated section.)

In Medium Bowl, combine milk, lemon juice,and zest. Blend in egg yolks. Pour into Cooled crust. (No need to cook the lemon mixture first.)

MERINGUE:
3 Egg Whites
1/4 tsp.cream of tarter
1/4 C.sugar.
Preheat oven to 325 degrees. Beat egg whites w/cream of tarter till soft peaks form. Gradually beat in sugar till stiff peaks form. Spread over filling, seal to edge of crust all the way around. Bake for about 15 min., or till meringue is golden brown.

Paula Deen's Sweet Potato Pie
2 Cups peeled, cooked, mashed sweet potatoes.
(best to mash w/electric mixture. Gets them real smooth)
1 1/4 Cups sugar
1/4 Cup (1/2 stick) melted butter
2 Eggs
1 tsp.vanilla
1/4 tsp.salt
1/4 tsp.cinnamon
14 tsp.ground ginger
1 Cup Milk
One 9-Inch Unbaked Pie Crust
3 Egg Whites

Preheat oven to 350degrees. For the filling, in a lg.bowl, combine the potatoes, one cup of the sugar, the butter, eggs, vanilla, salt, and spices. Mix very thoroughly. Add the milk, stirring well. Pour mixture into pie crust and bake 40-50min., or until a knife inserted in middle comes out clean. Place pie on a rack and cool to room temp.before covering with meringue.

Dark Chocolate Brown Sugar Pound Cake With Chocolate Glaze
2 1/4 C. cake flour

3/4 C. unsweetened Dutch-process cocoa powder

1/2 t. salt

1/4 t. baking soda

1 C. sour cream

2 1/4 sticks (1 C. plus 2 T.) unsalted butter, softened

1 1/2 C. granulated sugar

1 1/2 C. packed dark brown sugar

1 T. chocolate extract (optional)

1 t. vanilla extract

6 large eggs

Glaze:

3 oz. fine-quality bittersweet chocolate (not unsweetened)

2 T. unsalted butter

Accompaniments:

Brown sugar mixed into sour cream, to taste and strawberries

Do not preheat oven. Butter and flour 12-cup bundt pan, knocking out any excess flour.

I don't mind telling you that I am the best cook in the world. If I can't do anything else, I can truly cook. I made some of the BEST cornbread tonight that would really trip you out. LOLOLOL

I used canned milk, and a caste iron skillet, the eggs, and lots of honey. Yes, I know. I'm great.
