Well, we have had the strangest things happening lately! I noticed that the last time I posted here Leroy's work truck had been stolen. SINCE THEN, we found out who it was, told the police, nothing happened.

Last month someone called Child Protective Services in reference to the kids. It was all VERY made up and they were able to see that right away, closed the case right away, but it was still a hassell and the whole neighborhood knows about it!

Then Sunday early morning someone slashed all of Leroy's work truck tires and one of our personal truck tires. Can you believe all that stuff????? I think someone doesn't like us very much.............

I have two part time jobs now that add up to 41 hours a week with me still having Friday afternoon off, kewl huh?

I stopped going to the Pain Doctor, but the pain hasn't stopped. Need drugs :-)

Been going to pain management. Have disc and bone problems. Getting PT and steriod shots. The one yesterday seemed to work. My neck doesn't hurt like it used to.

No one ever reads this anymore, so I can probably write stuff here I don't want anyone to know. Kewl, huh?

I am still not working. I think I will be more than ready soon though. They found ulcers and kidney stones and I have meds for the former, so that is some the pain I don't have to go through. I am waiting results from a stomach biopsy and blood tests.

I go to a pain doc Tuesday on the advice of my Gastro Doc. Hopefully, I can get on some kind of regime that will allow me to get back to normal. I don't tell a lot of folks, but I hurt most of the time. My joints, but mainly my neck and back. Makes it hard to get up in the morning or to do anything around the house etc. I'm working NOW, finally, on getting things back together. I had gotten resigned to the fact that my primary doc was not going to help, but since all my new found diagnosis, I think I can get back to normal with the right treatments.

I found my daughter whom I had allowed to be adopted. All these years I have not been allowed to contact her and now she thinks that I chose other things over her. I wish I could tell her the real reasons, but she is not really ready for that and it would be mean me undermining her current mother. I find that hard to do, no matter how justified.

I think I might hang out her more now :-).

my mother in law made these all the time

5 lbs. lean pork or beef, cooked and shredded
6 to 7 lbs. fresh masa
1 1/2 lbs lard
1 tbls. salt
1 1/2 pts. red chili sauce
1 bundle oujas (corn shucks)
Directions

To make tamales, cook meat by boiling in a large covered pot with enough water to cover completely. Add salt to taste and slow boil till completely done. Cool meat and save broth. When meat has cooled, shred and mix in the chili sauce. Clean oujas (corn shucks or outer husk) in warm water. (make masa by hand or with mixer) Mix the masa, lard , salt and enough broth to make a smooth paste. Beat till a small amount (1 tsp) will float in a cup of cool water.

Spread masa (1/8 to 1/4 inch thick layer, or to preference) on ouja, add a small amount of meat and roll up. Fold up ends of ouja and place(fold down) on a rack in a pan deep enough to steam. Add 1 to 2 inches water, cover with a tight fitting lid and steam about 1 1/2 hours. (a cloth can be used under the lid to make a tighter fit)

Many variations of ingredients can be used in making tamales. You can use a combination of beef and pork, use chicken or even fried beans. One or two olives may be added to the center or try adding a few raisins.
This recipe will make 4 to 5 dozen tamales

"Paula Deen's Lemon Meringue Pie

One 14 oz.Can Sweetened condensed milk
1/2 C.Lemon Juice (fresh)
1 tsp.grated lemon zest
3 Egg Yolks
One 8inch PREBAKED pie shell ( I like the Pillbury kind that unroll; they're in the refrigerated section.)

In Medium Bowl, combine milk, lemon juice,and zest. Blend in egg yolks. Pour into Cooled crust. (No need to cook the lemon mixture first.)

MERINGUE:
3 Egg Whites
1/4 tsp.cream of tarter
1/4 C.sugar.
Preheat oven to 325 degrees. Beat egg whites w/cream of tarter till soft peaks form. Gradually beat in sugar till stiff peaks form. Spread over filling, seal to edge of crust all the way around. Bake for about 15 min., or till meringue is golden brown.

I am still looking for new position, but not always like I should. I DO NOT want a job I don't like though. That temp position I had for a couple of months sucked.

Got George back to school yesterday.

We had a nice holiday, and the kids were out all week. Jake and his wife drove to New York to site see the day after Thanksgiving. I want to see New York just one time!!! I've seen pretty much everything else I have wanted to see except maybe Niagra falls.

Here it is: Grandma's Banana-Nut Bread (the BEST)
2 C Flour
1 tsp.baking soda
1/2 C shortening
1 C Sugar
2 Eggs
3 Very Ripe Bananas (turning black)
2 Tbsp.Buttermilk
1/2 C chopped nuts

Preheat oven to 350,
Sift flour and soda together. Cream softened butter and sugar until fluffy. Beat eggs in a small bowl, then add to creamed mixture. Mash bananas very well, then add to creamed mixture. Add buttermilk and flour alternately, then stir in the nuts. Pour batter into greased loaf pan, and bake at 350 degrees for one hour. Best served piping hot with real butter!

I mentioned before that I had lost a lot of weight, down from 213 and I got down to as low as 162. Now last time I checked I weighed 167. With all this cooking, I hope I can keep it down. I have decided to probably take the little girls to Busch after I pick them up and walk around the park a few times. It would be a nice walk and both Lee Lee and I need the excersize. It won't hurt Destiny either.

In the meantime, I am looking up the Martha Stewart website. I am so corny, I guess. It's a lot of fun though.

By the way, that banana bread didn't turn out too good yesterday, so my sister Paula is sending her Grandma's recipe. I am going to get up right this minute, lay out something for dinner and bake that pound cake. I have the recipe from Emeril's Pot Luck cookbook (which I probably posted about before). I have learn that baking and cooking are different. When you cook you can you a recipe or ideas from a recipe and do your own thing. When you bake, you are following a formula and you have to learn to do it the way the originator does it and make changes in flavors but not the basics.

That was my advice for the day.

Cooks.com - Recipe - Banana Nut Bread With Bisquick This is the same recipe as indicated in the link below, but I have it in the oven right now :)! I also baked some cheese onion bread in my BreadBox bread maker. I am going to do ham steacks for dinner, but need to figure out what I am going to do with these russet potatoes.

I am either going to do Emeril's Lemon Pound cake later today or tomorrow. I am really enjoying being home, cooking and baking, even the cleaning. I have enrolled the girls' in girls scouts too!

Leroy loves all this shit of course. I think he stains his work shirts on purpose just to entertain me and to see if I can get whatever it is out. I have managed with everything except the ink!!!
